Running the kitchen, chef Claudio Lisai creates a menu that reflects a clear vision: to showcase the mountains through balance, respect for the ingredients and attention to detail.
Our menu is constantly evolving, always centred on carefully selected ingredients and a thoughtfully curated supply chain, in line with the Dolomites’ local-first philosophy. Meat, game and artisanal preparations meet refined Mediterranean influences, creating balanced contrasts that are never overdone. Among the signature dishes, cocoa tagliatelle with red partridge and redcurrants perfectly express this identity: intensity, finesse and personality in a dish that leaves a lasting impression.
